Mango and Goat Cheese Quesadillas with Chili Lime Drizzle

Ingredients:
- 4 large flour tortillas
- 1 ripe mango, peeled, pitted, and thinly sliced
- 4 oz crumbled goat cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup thinly sliced red onion
- 2 tablespoons olive oil
For the Chili Lime Drizzle:
- 1/4 cup olive oil
- 1 lime, juiced and zested
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a small bowl, whisk together all the ingredients for the chili lime drizzle. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet.
- Top with 1/4 of the mango slices, goat cheese, cilantro, and red onion.
- Fold the tortilla in half.
- Cook for 2-3 minutes per side, or until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges.
- Drizzle with the chili lime drizzle.
- Serve immediately.
Things to Avoid:
- Overfilling the quesadillas: This will make them difficult to fold and cook evenly.
- Cooking over high heat: This will burn the tortillas before the cheese has a chance to melt.
