This recipe adds a unique twist to the classic Arrabiata, balancing the heat with a touch of sweetness from honey and a hint of smokiness from the pancetta.
Ingredients:
- 1 pound dried penne pasta (or your favorite pasta shape)
- 4 ounces pancetta, diced (substitute: bacon or guanciale)
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to your spice preference)
- 1/4 teaspoon smoked paprika
- 1 (28-ounce) can crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon honey
- 1/4 cup chopped fresh basil
- Salt and freshly ground black pepper to taste

Instructions:
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
