Spicy Arrabiata Pasta with Pancetta

Spicy Arrabiata Pasta with Pancetta and a Touch of Honey

Original Recipe

This recipe adds a unique twist to the classic Arrabiata, balancing the heat with a touch of sweetness from honey and a hint of smokiness from the pancetta.

Ingredients:

  • 1 pound dried penne pasta (or your favorite pasta shape)
  • 4 ounces pancetta, diced (substitute: bacon or guanciale)
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • 1/4 teaspoon smoked paprika
  • 1 (28-ounce) can crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon honey
  • 1/4 cup chopped fresh basil
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Render the pancetta: Heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy and the fat has been rendered.
  3. Build the sauce: Add the garlic, red pepper flakes, and smoked paprika to the skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Simmer the sauce: Stir in the crushed tomatoes, tomato paste, and honey. Bring to a simmer, then reduce heat and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  5. Combine and serve: Add the cooked pasta and reserved pasta water to the sauce. Toss to coat well. Stir in the fresh basil and season with salt and pepper to taste.
  6. Serve: Divide the pasta among plates and top with grated Parmesan cheese.

Things to Avoid:

  • Overcooking the pasta: Cook until al dente so it retains its texture when mixed with the sauce.
  • Burning the garlic: Cook the garlic just until fragrant to avoid bitterness.
  • Skipping the reserved pasta water: It helps create a creamy texture and binds the sauce to the pasta.
  • Using low-quality ingredients: San Marzano tomatoes and good quality olive oil make a big difference.

Serving Suggestions:

  • Crusty bread for dipping in the sauce
  • A side salad with a light vinaigrette
  • A glass of chilled red wine
